Here at the Hospitality Establishment, we pride ourselves on being open, and not being “just a business” – particularly where our clients are concerned. We want you guys to see the person behind the company, and that person is Aaron Crossin. I’ve created a bit of a fun Q & A with Aaron, check it out! What are your tips for cooking healthy meals? Use fresh ingredients. Some of my favorite healthy meals really just focus on simple flavors and fresh, quality produce. No sauces. Just good stuff! My other tip would be to cook your food to perfection (or as close as possible). For me, nice crisp veggies, tender juicy chicken or a beautiful medium rare steak that’s well seasoned makes all the difference compared to dried, overcooked and tough food. Do you have a favorite location to cater at?   I love being close to the water. Nothing beats a fresh sea breeze – especially in a sometimes hot kitchen. We travel a lot so there’s many different locations around Sydney and the south coast on land and at sea (on boats). Some of the houses we work at on the water are pretty amazing too. Who influences your cooking? My dad’s a chef so he has always been a big influencer. Also great chefs who either worked for me or that i have worked with I’m always learning new dishes or better ways to do something. What are some overrated spices? I don’t know about overrated! I’m sure I’m not alone in saying getting back in to the swing of work/school after the holidays can be such a pain! So, while we don’t condone excessive drinking, there’s nothing wrong with a little indulgence This Italian cocktail recipe is super easy and delicious; using just sparking wine (usually Prosecco) and white peach puree, it’s heaven in a glass. Simply, pour peach purée into a chilled champagne glass up to one third and top with sparkling wine. Almond and Iced Dandelion Smoothie

Almond and Iced Dandelion Smoothie

One of our staff members usually has a dairy free diet, and she has a delicious and creamy smoothie recipe to share! Ingredients: 2 Teeccino tea bags 500ml coconut or almond milk of your choice 1/2 cup No Udder Almond or Coconut Yoghurt 1 banana A pinch of cinnamon Handful of ice 1 tsp of chia seeds/cacao nibs/goji berries Method: You can make the iced dandelion “coffee” ahead of time by placing two Teeccino bags in boiling water in a 1L jug, and then topping it up most of the way with either almond or coconut milk, then place it in the fridge or freezer – depending on how much time you have. Once the mixture has cooled, blend it together with the other ingredients and top with cacao nibs/chia seeds or goji berries. The best part about this creamy smoothie (you could almost call it a thickshake!) is it’s totally dairy free, and you won’t need to add anything sugary to it. Enjoy!
