Lemongrass Chicken

ingredients. 4 chicken thigh fillets 4 stalks of lemongrass 3 large red chillies, de-seeded 60ml fish sauce 6 eshallots, finely sliced 4 cloves of garlic, finely sliced 1 young coconut 2 green shallots Juice of 1 lime Pinch of sugar   method. – Pound half the lemongrass in a mortar and pestle (use only the white part of the lemongrass). – Add 2 large red chillies and continue pounding until a uniform paste is achieved. – Add fish sauce and sugar, mix to combine and then use this to marinate the chicken for at least 2 hours (best to do the day before). – Pound remaining chilli and lemongrass and place in a frying pan over medium heat. Cook until it slightly browns. – Add chicken and cook until golden in colour. Remove from pan and set aside. – Add garlic and eshallots and fry until golden. Banh Xeo – Vietnamese Style Crepe

batter. 500g rice flour 4 ½ cup water 1 cup coconut cream 1 tsp ground turmeric 1 bunch green shallots, thinly sliced Pinch salt and pepper Veg oil for frying (makes about 10-12 pancakes)   filling. 1 Kg cooked tiger prawns 400g pork belly 1 pack bean shoots 1 bunch Vietnamese mint 1 bunch Thai basil 1 bunch coriander   method. – Bring a large pot of salted water to the boil and cook pork belly for 20 minutes. – Once cooked, drain off water and set aside to cool slightly. Slice pork belly into thin pieces. – To make the batter, mix all ingredients together using a whisk until there are no lumps left. Mixture should have a smooth and glossy texture. – Heat a small fry pan with a little oil and fry off some green shallots for a minute. Pour about a cup of mixture into the pan and roll around to spread the batter evenly in the pan. When the batter starts to crisp up on the sides place a small amount of each filling into the centre. – Fold one half of the pancake over to conceal the filling.
