Chicken Mince Stir Fry

I really like this recipe because it’s so simple, and yet so flavorful and delicious! It works for those cooler Summer nights when you want more than a salad :)

Ingredients:
300g chicken mince
2 large red chillies
2 cloves garlic
1 small knob ginger
2 coriander roots
1⁄2 bunch Thai basil
4 snake beans, sliced
2 eggs
1 pinch white pepper
2 tbs oyster sauce
2 tbs kecap manis
2 tbs water
Method:
Pound ginger, garlic and coriander root until it forms a fine paste. Heat wok with vegetable oil, until just smoking. Add paste and fry until golden and fragrant.
Add chicken mince and fry until it begins to brown.
Add chilli and snake beans and stir fry for another one minute. Season with oyster sauce , kecap manis & pepper. Before serving add Thai basil and water.
Serve with rice and fried egg on top.
