Spinach, Chicken and Pomegranate Salad Recipe

Not feeling too inspired by good ol’ Cesar salad, but still want to boost your raw greens with some protein? This spinach and chicken salad, jazzed up with pomegranate seeds can be anything: a great entre, side dish, or a light, but satisfying meal.

Rich in potassium, vitamin C, B group vitamins and magnesium, pomegranate is one of nature’s super fruits. You can have it fresh when in season, from November to March, but you can easily find freeze-dried pomegranate arils and enjoy it all year round. Their vibrant colour will make your plate festive and fun and freshen up your day.

Here’s how to prepare this week’s yummy treat.

Ingredients:

For the salad:

  • 4 chicken breasts
  • 200g baby spinach
  • ½ red onion, thinly sliced
  • Handful of pomegranate seeds
  • 1 avocado, chopped

For the dressing:

  • 2 tbsp olive oil (extra virgin if possible)
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper to taste

For the marinade:

  • 2 tbsp juice of a lemon, freshly squeezed
  • 1 tsp garlic, minced
  • 1 tsp oregano, chopped
  • Salt and pepper to taste

Method:

In a bowl, mix the ingredients for the marinade and coat the chicken breasts on both sides. Put the meat in a shallow dish with whatever is left of the marinade and leave it in the fridge for at least two hours. (If possible, let the meat marinate longer. This will give it a more intense flavor.)

Place chicken on a grill pan on medium-high heat and grill each side for around 5 minutes, or until cooked through.

In a large bowl, combine the spinach, red onion, avocado and pomegranate seeds. This is the base of your salad.

Place chicken on a chopping board, slice into desired size and mix in with the other ingredients.

In a separate bowl, mix the olive oil, balsamic vinegar, honey and, salt and pepper and pour over the salad.

For best flavor, serve chicken warm or at room temperature.
