  • ½ teaspoon baking soda

  • 1 cup vegan buttermilk (1 cup almond milk mixed with 1 tablespoon lemon juice)
  • 1 vegan egg replacer (1 tablespoon of flax or chia and 3 tablespoons water)
  • 2 tablespoons rosemary (fresh)


Prepare line loaf pan with parchment paper and preheat oven to 180C. Make buttermilk in a bowl and put aside. In another bowl mix flour, baking soda, baking powder, salt and sugar. Now add buttermilk, mashed avocado, egg substitute and rosemary to bowl with dry ingredients and mix all well. Pour batter into loaf pan and bake for 45 minutes. Allow it to cool before serving.

Let the bread cool for 10 minutes, then remove it from pan and let it cool completely for about an hour. Melt heavy cream and white chocolate in a microwave until creamy. Drizzle glaze over the bread and sprinkle coconut. Allow glaze to set before slicing.
